Fish on the roof: ultra local food from Garden Ladder, Harringay
A mixed fish and plant aquaponics system. See video below for actual system being used.
The Garden Ladder is in the final stages of becoming the fourth restaurant in the UK to establish an aquaponics system to supply its kitchens with organic produce.
The system will be sited on the roof behind the Garden Ladder on Green Lanes, Harringay.
"We're committed to fresh, organic, locally sourced food and when we heard about this system we thought well you can't get fresher and more local that that!", Simon, joint owner of the Garden Ladder told me this morning
Due in operation this year, the aquaponics system will supply fresh tilapia and vegetables direct to the kitchens downstairs.
The aquaponics system works by combining fish farming techniques with hydroponics to recreate the essential ingredients of a river ecosystem.
Fish fingerlings (tilapia in this case) are grown in the tank. The waste from the fish – ammonia and nitrates - provides food for the plants that are on the surface of the tank where they purify the water by soaking up the nitrates and ammonia.
As soon as everything's up and running, Simon's promised to let me at it with a camera, In the meantime, the picture above is illustrative and may well be different to Simon's system.

I really don't understand why we aren't celebrating this iniative.
The owners of this business are putting a lot of their own money into doing something genuinely innovative and rather than depending on depleting our already diminishing fish stocks are looking at a new ways of providing those of us who eat fish and meat with a more sustainable way of having it.
When you buy your fish from the local supermarket it's either from over harvested stocks or from lice ridden factory farmed animals. Also the Garden Ladder has invested a considerable amount of money in making their shop front one of the most attractive on Green Lanes.

Like ESSO Tiger vouchers in the 1970's ethics are fashionable and not statitory. Ethics are personal and not set in stone and every one of our ethical compasses will be different.
Accreditations also appeal to the us all as it gives us a guilt free sense be it Fairtrade, Organic, Natural, Sustainable, Low-Fat, Vegetarian, Free-Range etc They are a clever way to make us pay more for releasing our guilt as in a shopping trip to New York which you can offset at a premium of course.
Farming fish is a very mixed debate even in the tree hugger community as it has rocketed to 50% of all consumed fish up from 5% on a couple of decades ago. We are now trying to produce sustainable fish that we made un-sustainable? You can of course get plenty of fish from natural sustainable sources, many will be unfashionable fish but the MSC mark guarantees that they are not farm produced. Some farm fish are fed on fish pellets which still relies on, well fish products, some on vegetation only.
I wouldn't expect any veggie (ones who don't eat fish, or wafer thin turkey) to think this was a ethical way to produce fish, why would they? I am not being a party pooper I don't like the idea of any animal or slippery relative being constrained, least of all in a bath below the spider plant!
It seems to have overall HOL support, so begrudging congratulations to the Garden Ladder : )

Hi Birdy,
A lot of veggie Aussies are using aquaponics because it is guaranteed to be free of chemical nutrients, chemical fertilizers and chemical pesticides. You cannot put these in the system as it will kill the fish. They use an ornamental fish such as Koi Carp or Goldfish to supply the nutrients for the plants. We will be using Duck Weed and veggie food for our fish.

Hi Pete,
Had a slight pause waiting for building inspectors etc after we installed the steel beams to support the water tanks. That was passed on Monday. Build now continues, should be operational in about 8 weeks.
I will be posting pictures as soon as there is something to see. Thanks for the interest.
