I was taken to eat at Magara Restaurant the other day, just north of Gokyuzu. Not only did I meet Apo, the very friendly owner but I met his charming parents who are over for a visit from their farm in Adana in Turkey. Mum whispered in my ear that many of the recipes Apo uses are her farming family's recipes handed down over the generations.
I certainly enjoyed my food, including the Mum's secret recipe içli köfte (wheat parcels filled with minced lamb). I was also taught how to eat them the right way - pick one up with the fingers of both hands, bite off and eat a little of the wheat crust, squeeze lemon over, bite and eat, repeat. I always enjoy learning how to eat food the traditional way.
I forgot to ask how much of Mom and Pop's farm fresh food finds it way on to Apo's tables. I wouldn't mind betting that some does at least.
Worth a try next time you want to eat Turkish.
