Pigeon is very nice, best casseroled or braised in red wine, squirrel can be cooked to any rabbit recipe.
Had grouse once up in the Highlands whilst working/living there pre vege days. Very different taste.
On a wider note, UK farming across the board will have to change pretty significantly after brexit kicks in. With all imported items going up in price by 7-10% minimum due to tariffs, UK consumers will focus more on local produce where possible if it ends up being cheaper. More work for agriculture/horticulture, if they can find the workers.
My Greek car mechanics often had a few pigeons hanging up when I went for a car fix. Airgun/bang/dinner, they said they were delicious.
If I ever ate meat again it would be game or roadkill. Are pigeons game? Stuff that has a bit of a life beforehand, and is not killed in a slaughterhouse. Venison too, deer which are shot in their field as they don't travel well in a truck.
They're not classified as game as there is no shooting season for them, they are mainly seen as a pest by farmers because they nip the tops out of young shoots.
Last time I was in Suffolk couldn't believe how many wood pigeons there were. Almost as many as we have common pigeons around our urban paradise :)
Yes wood pigeon is tasty - but taste gets old quick. Grew up in a community that hunted on a regular basis. Can't even look at game any more.
