Anyone got any good recipes with honey in them?
We are having a Bees and Butterflies Day at Railway Fields on 28 July. We want to provide some bee-related refreshments.

I make flap jacks with honey and demerara sugar. I nicked this recipe from a BBC website, though I work in Imperial and round up the quantities.
Ingredients;- 200g/7¼oz unsalted butter , 200g/7¼oz demerara sugar, 200g/7¼oz honey, 400g/14¼oz porridge oats, (Optional- 50g/1¾oz nuts, dried fruits or glacé ginger, chopped or desiccated coconut). You will also need a 20cm x 30cm (8in x 12in) cake tin, greased.
Preparation method 1/Put the butter, sugar and honey in a saucepan and heat, stirring occasionally, until the butter has melted and the sugar has dissolved. Add the oats and nuts, fruit, ginger or coconut, if using, and mix well. 2/ Transfer the oat mixture to the prepared cake tin and spread to about 2cm (¾in) thick. Smooth the surface with the back of a spoon. Bake in a preheated oven at 180C/350F/Gas 4 for 15-20 minutes, until lightly golden around the edges, but still slightly soft in the middle. Let cool in the tin, then turn out and cut into squares.

Mascarpone, fruit and honey go really well together. Lots of recipes for that type of thing in google.

I probably should know this but can anyone tell me where I can get really local honey (Harringay honey possibly!). I'm suffering with terrible hayfever and this is supposed to be a good remedy - so far nothing has ever worked for me!

There used to be Tottenham Honey (and another one here) That may still be going. I think they also have hives In Finsbury and Alexandra Parks, but I'm not sure if they sell honey.

My other half has taken Highgate Honey for about two years, a teaspoon daily from early spring to late summer. He got it from the health food place in Crouch End. He was a bit cynical about the whole idea at first but it really seems to work - his hayfever symptoms have been hugely reduced and he only has to take antihistamines very occasionally, rather than on a daily basis in summer as he used to. So definitely worth a try!
