Harringay online

Harringay, Haringey - So Good they Spelt it Twice!

The Sage (herb) plant which shares a sink with other herbs in my garden has run wild in the last few weeks.

I've just (last half hour) cut back about half a carrier bag of the stuff (although not attempted to split the roots at all so it will doubtless grow back dramatically again).

If anyone likes Sage and has a better idea than I do of what to do with the leaves - I tend to use lightly to season cooking and will simply dry some of what I've pruned back- please let me know and come and collect (socially distanced/left safely in a bag in the front garden) some/most of the leaves I've cut back!!

I've tried to add a couple of photos so you can see all very fresh and healthy new leaves from a healthy mother plant but pics not showing when I preview but may perhaps come up when 'post'!

can you freeze the leaves?

I've checked up on this after seeing your reply - as always just use fresh myself. I'm advised by a family member who is an exceptional cook that can freeze leaves individually/two or three at a time in olive oil in small bags or ice cube trays as a good stock starter

Here is how to do this - https://www.thekitchn.com/freeze-herbs-in-olive-oil-173648

Also according to the website below Sage leaves freeze well in a freezer bag or in water https://www.freezeit.co.uk/can-you-freeze-sage/

and here is a page of recipes - some of which are the sort of thing we use sage for = but really we only tend to make sage butter for ravioli or pumpkin or to make home made vegan stuffings/or use a small amount when want a strong flavour for a casserole etc but there are a lot more suggestions in the website above I've just looked up...

Hi there you can dry the branches with leaves intact and then bind them together in bunches to make sage specifically for burning and cleansing the spaces in your house - its an old American Native ceremonial Ritual that lots of people use today to get rid of bad energy in their homes
